Did you know?

A mushroom whose small amber caps are covered by a natural gelatinous coating, and that slippery surface is exactly what Japanese cooking wants from it. It is the classic mushroom of miso soup and soba noodles. It is cultivated on logs.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
