The bitter lupin of the Andes, rivalling soya in protein content and growing above 3,000 metres. ⚠️ The seeds carry very bitter alkaloids and are not edible until these are leached out by days of soaking in running water and boiling. Once processed they go into soups and salads, known in Ecuador as chocho.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
