What it is & how it is made
Lactic acid, known as milk acid; commercially it is generally produced by fermenting plant sugar (maize, beet).
Where it is used
Used as an acidity regulator and preservative in pickles, dairy products, beverages, sauces and confectionery.
Health note
It is a natural food acid and is considered safe.
