- What it is & how it is made
- An emulsifier found naturally in oilseeds and eggs (it binds fat and water together). In the food industry the great majority is obtained from soy or sunflower (plant-based).
- Where it is used
- Used in chocolate, margarine, baked goods, infant formula and ice cream to keep the mixture from separating.
- Health note
- It is considered safe; it is a natural food component.
- Halal assessment
- The bulk of commercial lecithin is produced from soy (plant-based) and is halal in that respect. Egg lecithin may rarely be used; that too is halal. Consulting the manufacturer is advised only where the source is not clearly stated.
