- What it is & how it is made
- A salt of citric acid (potassium citrates); like citric acid it is generally produced by fermentation and carries no animal source.
- Where it is used
- Used as an acidity regulator and antioxidant in beverages, dairy products, jam and processed foods.
- Health note
- It is considered safe at ordinary levels.
- Halal assessment
- Its source is fermentation or plant-based and nothing animal is expected; however, under the doubtful-by-default principle it has been left as doubtful in the absence of process confirmation. No problem is generally seen.
