What it is & how it is made
A salt of citric acid (potassium citrates); like citric acid it is generally produced by fermentation and carries no animal source.
Where it is used
Used as an acidity regulator and antioxidant in beverages, dairy products, jam and processed foods.
Health note
It is considered safe at ordinary levels.
Halal assessment
Its source is fermentation or plant-based and nothing animal is expected; however, under the doubtful-by-default principle it has been left as doubtful in the absence of process confirmation. No problem is generally seen.
