What it is & how it is made
The sodium salt of alginic acid, produced by neutralising seaweed derived alginic acid with sodium carbonate. It dissolves in cold water.
Where it is used
Used as a thickener and stabiliser in ice cream, dairy desserts, sauces, salad dressings, confectionery and restructured foods.
Health note
Evaluated within the alginate group; a numerical acceptable daily intake was not considered necessary. Digestive complaints may be reported at high intakes.
Halal assessment
