- What it is & how it is made
- The sodium salt of alginic acid, produced by neutralising seaweed derived alginic acid with sodium carbonate. It dissolves in cold water.
- Where it is used
- Used as a thickener and stabiliser in ice cream, dairy desserts, sauces, salad dressings, confectionery and restructured foods.
- Health note
- Evaluated within the alginate group; a numerical acceptable daily intake was not considered necessary. Digestive complaints may be reported at high intakes.
- Halal assessment
- The source is seaweed and the counter ion is a mineral (sodium); it contains no animal input. Consult the manufacturer's halal certificate for a definitive answer.
