What it is & how it is made
Also known as polyoxyethylene sorbitan monostearate. It is a synthetic emulsifier obtained by esterifying sorbitan, derived from sorbitol, with stearic acid and then treating it with ethylene oxide. Stearic acid can be derived from either vegetable or animal fats.
Where it is used
Used as an emulsifier in bakery products, cream fillings, ice cream, coffee whiteners and confectionery.
Health note
JECFA has established a group acceptable daily intake of 25 mg per kg body weight for the polysorbates.
Halal assessment
The decisive point is the origin of the stearic acid: if it is produced from vegetable fat no issue is expected, whereas if it is produced from animal fat the species and method of slaughter become relevant. Unless the source is documented it should be treated as source dependent; consult the manufacturer's halal certificate for a definitive answer.
