- What it is & how it is made
- A gelling agent obtained from the collagen in the skin, bones and connective tissue of animals. Its source is animal; the most common sources are cattle and pigs.
- Where it is used
- Used in jelly, gummy sweets, marshmallows, some yoghurts and desserts, medicine capsules and aerated products.
- Health note
- It is safe as a food; it is protein-derived.
- Halal assessment
- What is decisive is the species of animal and the manner of slaughter: pork gelatine is haram, whereas bovine gelatine is accepted as halal only if it comes from an animal slaughtered according to Islamic rules and is halal-certified. When the source is not documented, it is doubtful as a precaution. 'Fish gelatine' and 'plant-based gelling agents (agar, pectin)' are halal alternatives. For this reason it has been classified as doubtful; the product's halal certificate should be sought.
