- What it is & how it is made
- A flavour enhancer (umami) that is the sodium salt of glutamic acid. Industrially it is produced by sugar or starch fermentation (microbial); its source is usually plant-based.
- Where it is used
- Widely used as a taste intensifier in instant soup, crisps, stock cubes, sauces, ready meals and snacks.
- Health note
- Its health effects have long been debated; although scientific bodies consider it safe at ordinary levels, sensitivity such as headache is reported in some people. Some regard it with caution from the standpoint of the 'tayyib' principle.
- Halal assessment
- Its production is usually based on plant fermentation and it contains no animal matter; in that respect no halal obstacle may be seen. However, because the fermentation medium and the purification additives are not always transparent and a halal certificate is generally absent, no definitive ruling has been given and it has been left as doubtful. For definitive information, the manufacturer's certificate should be consulted.
