- What it is & how it is made
- A flour treatment agent and amino acid used in doughs. Traditionally from keratin sources such as human hair, animal hair, feathers or hooves; today it can also be produced by microbial fermentation.
- Where it is used
- Used in bread, simit, hamburger buns and some baked goods to soften the dough and improve its workability.
- Health note
- It is considered safe at the levels used.
- Halal assessment
- Because its classic source may be human hair or non-halal animal keratin, it has been marked in this site's classification as haram or unsuitable. Its being of human origin is also highly contentious. L-cysteine of microbial (fermentation) origin that is halal-certified can be accepted as halal; a certified product should therefore be preferred.
