The pineapple-shaped core of the agave that remains once the leaves are cut away. Baked in an earth oven for a day or two its starch turns to sugar, giving a sweet, fibrous food that is an ancient staple of the Indigenous peoples of the southwestern United States. The same core is used to make mezcal.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
