A plant of the carrot family whose name means tomorrow's leaf, because it puts out new growth quickly after cutting. On Japan's Izu islands the young leaves are made into tempura or blanched and eaten, with a markedly bitter, herbal taste. A yellow sap runs from the cut stem.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
