A green as bitter as its name; before cooking it is washed and rubbed by hand repeatedly to draw out the bitterness. In Nigeria and Cameroon it is the base of bitter leaf soup. It is among the best known traditional vegetables of West Africa.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
