Did you know?

A small, angular legume resembling lentil that has been grown in Anatolia since the Neolithic and turns up in excavations alongside wheat and barley. ⚠️ Its bitter compounds mean it must be soaked at length with changes of water before cooking; in Turkey today it is largely a fodder crop, and as human food it belongs to times of scarcity.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
