The North American relative of the walnut, with a very hard shell wrapped in a sticky husk that makes it awkward to crack. The kernel is oilier and sweeter than walnut. A fungal disease is rapidly reducing wild trees, so it is rarely found in commerce.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
