The young leaves and shoots of the cowpea plant, among the most common greens of East and Southern Africa under names such as kunde and thepe. The leaves are picked before the pods mature, so one field yields two foods. They are boiled and mixed with groundnut paste.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
