Did you know?

It has nothing to do with curry powder; it is the leaf of a small tree in the citrus family. In South Indian cooking it is crackled in hot fat at the very start of a dish, since its aroma is released by heat and largely lost on drying.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
