Did you know?

In Turkey the name labada covers several Rumex species; the plant shown is curly dock (Rumex crispus). The broad-leaved kind used in Anatolia for stuffed wraps is Rumex patientia, also called evelik. Its stalks are pickled; it belongs to the same genus as sorrel and carries a similar gentle sourness.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
