The fruit of the doum palm, the only palm that branches, with a hard, glossy brown shell. The edible part is the dry, fibrous layer just beneath the shell, whose taste recalls gingerbread; it is ground into a powder for drinks. It has been found in ancient Egyptian tombs.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
