It is the seed of a tree that has come down almost unchanged for 200 million years, a true living fossil. In East Asia it goes into hot pots and chawanmushi; because of a compound it contains, more than a few nuts a day is not advised, especially for children.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
