Gardeners treat it as a weed because its roots are almost impossible to clear, yet the young leaves have the pleasant scent of the carrot family and are cooked like spinach. In the Middle Ages it was deliberately grown in monastery gardens. Only bright green, newly opened leaves are gathered, as older growth turns resinous.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
