Did you know?

Instead of gills, the underside of its cap carries small spines like a hedgehog's, which is how it got its name. That structure makes it one of the easiest and safest mushrooms to identify. The flesh is firm with a faintly bitter, nutty taste, and it is often gathered alongside chanterelles.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
