Swollen, blue-grey kernels formed by a fungus that develops on the corn cob. Treated as a crop disease in North America, in Mexico it has been a prized food since Aztec times, sautéed with butter and onion for quesadillas and soups. The flavour is earthy and mushroom-like.
Consumption tip
Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
