A dark purple relative of the mangosteen, of which the dried rind is the part actually used. In Indian cooking it stands in for tamarind as a souring agent in curries and fish dishes, lending a purplish colour. The dried rind keeps for years.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
