It cannot be cultivated and can only be gathered in forests, since it depends on a symbiosis with tree roots. Drying concentrates its aroma, which is why it is mostly sold dried; in Turkey it is collected in the Black Sea forests and exported.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
