Did you know?
Known in the Philippines as ube, this yam has purple flesh coloured by anthocyanins that survive cooking. Boiled and mashed, it goes into sweets, ice cream and breads. It is often confused with purple sweet potato, but it is a different plant.
Consumption tip
Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
