Both the white, radish-like root and the young leaves of this bellflower are eaten; raw in salad the root is crisp with a nutty taste. It was a common winter vegetable in medieval Europe. It is the plant that gives the Grimm tale Rapunzel its name.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
