The white seeds of the safflower plant, resembling sunflower kernels and grown mainly for their oil. The kernels are also roasted and eaten as a snack. The plant's orange florets are used as a dye in place of saffron, though the two are unrelated.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
