A starch obtained by pounding and washing the pith from the trunk of the sago palm; it is the staple of Papua and Maluku, eaten as the gelatinous porridge called papeda. A single tree felled just before it flowers yields hundreds of kilos of starch. It is almost pure carbohydrate and contains no protein.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
