Did you know?

A long, slender root with black skin; once peeled, the white flesh exudes a milky sap and darkens quickly, so it is held in acidulated water. The taste is mild and faintly sweet, often likened to asparagus. It is confused with salsify but belongs to a different genus.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
