A wild green resembling dandelion that bleeds white latex when broken; the young leaves are slightly bitter and in Mediterranean cooking are boiled and dressed with olive oil. Carried as far as New Zealand, it became a staple green in Maori cooking under the name pūhā. Once it flowers the leaves turn tough.
Consumption tip
Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
