The wild African relative of black pepper, with grains smaller than peppercorns and a sharper aroma carrying notes of thyme and anise. Nigerian cooking uses both the grains and the leaves, the leaves being stirred into soups at the last moment. It reached medieval Europe through the trade in tailed pepper.
Consumption tip
Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
