The hard, two- or four-horned fruit of a plant that floats on still water; cracking the shell reveals a white, starchy kernel. ⚠️ It is not eaten raw but boiled or steamed. Cultivated in China and India for centuries, it is a different plant from the water chestnut despite the similar name.
Consumption tip
Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
