Did you know?

A pale brown fungus that ripens underground beside the roots of oak, poplar and willow. Unlike the black truffle it has never been brought into cultivation and is found only in the wild with trained dogs. Heat destroys its aroma, so it is never cooked but shaved raw over the finished dish.

Consumption tip

Even natural produce may carry pesticide residues. Wash fruits and vegetables under plenty of running water and discard the outer leaves of leafy greens. A short soak in vinegar water can also help reduce residues. Where possible, prefer certified organic or good-agricultural-practice products.
