- What it is & how it is made
- A brown caramel colour produced by an ammonia process. Although its source is sugar (plant-based), ammonium compounds are used in production.
- Where it is used
- Used for brown colour in beer, sauces, baked goods and some beverages.
- Health note
- The 4-methylimidazole (4-MEI) compound that can form during production has been debated with regard to health. It calls for caution from the standpoint of the 'tayyib' (wholesome) principle.
- Halal assessment
- Although its source is plant-based (sugar), it has been left as doubtful because of the production process and the health debate. It is synthetic in origin and contains no animal matter; in that respect no halal obstacle is seen. However, because it is a synthetic colour and because of the health debate, it has been left as doubtful under the 'halal and tayyib' principle; the decision rests with the consumer.
