- What it is & how it is made
- A natural preservative produced by bacteria (nisin, a bacteriocin); it is obtained by fermentation of the bacterium Lactococcus lactis.
- Where it is used
- Used as a preservative against bacteria in cheese, processed cheese, milk desserts and canned goods.
- Health note
- It is considered safe at ordinary levels.
- Halal assessment
- It is produced by fermentation; however, because the growth medium is frequently MILK-based and the production environment is not always transparent, it has been left as doubtful. Its form grown on a plant-based medium, or a certified form, can be accepted as halal.
