- What it is & how it is made
- An acid found naturally in citrus fruits. Industrially almost all of it is produced from sugar fermentation with the mould Aspergillus niger (microbial); its source is plant-based or microbial.
- Where it is used
- Very widely used as a souring agent, acidity regulator and preservative in beverages, confectionery, jam, canned goods and many other foods.
- Health note
- It is considered safe. It is a natural food acid; there is no drawback at ordinary levels.
- Halal assessment
- Because it is produced by fermentation on a plant or mineral growth medium, it is widely accepted as halal. No animal matter is used in its production. For this reason it has been classified as halal.
