Detailed information
- What it is & how it is made
- A natural polysaccharide obtained from brown seaweeds (species such as Laminaria, Macrocystis and Ascophyllum). The seaweed is treated with an alkaline solution and filtered, then alginic acid is recovered by acid precipitation.
- Where it is used
- Used as a thickener, gelling agent and stabiliser in ice cream, salad dressings, dessert jellies, dairy desserts, jams and similar prepared foods.
- Health note
- JECFA and EFSA have evaluated the alginates and concluded that a numerical acceptable daily intake (ADI) was not required. As an indigestible fibre, digestive complaints may be reported at very high intakes.
- Halal assessment
- It is sourced from seaweed and no animal input is used in its production. Even so, the carrier or processing aid in the finished product may differ, so consult the manufacturer's halal certificate for a definitive answer.
