What it is & how it is made
The calcium salt of alginic acid. Calcium ions cross link the alginate chains, so it forms a gel without the need for heat.
Where it is used
Used as a gelling agent and stabiliser in restructured foods (for example the filling of stuffed olives), confectionery jellies and encapsulation applications.
Health note
Evaluated within the alginate group; a numerical acceptable daily intake was not considered necessary.
