- What it is & how it is made
- The calcium salt of alginic acid. Calcium ions cross link the alginate chains, so it forms a gel without the need for heat.
- Where it is used
- Used as a gelling agent and stabiliser in restructured foods (for example the filling of stuffed olives), confectionery jellies and encapsulation applications.
- Health note
- Evaluated within the alginate group; a numerical acceptable daily intake was not considered necessary.
- Halal assessment
- The source is seaweed and the counter ion is a mineral (calcium); it contains no animal input. Consult the manufacturer's halal certificate for a definitive answer.
