- What it is & how it is made
- A natural gelling agent obtained by hot water extraction from red seaweeds, particularly Gelidium and Gracilaria species. The extract is filtered, gelled and dried.
- Where it is used
- Used as a gelling agent in confectionery jellies, bakery fillings, dairy desserts, canned meat products and glazing gels; it is also well known as a microbiological culture medium.
- Health note
- Evaluations concluded that a numerical acceptable daily intake was not required. As an indigestible fibre it may affect bowel movements at high intakes.
- Halal assessment
- It is sourced from seaweed and no animal input is used in its production; it is also referred to as a plant based alternative to gelatine. Consult the manufacturer's halal certificate for a definitive answer.
