- What it is & how it is made
- A plant galactomannan gum obtained by milling the endosperm of the seeds of the carob tree (Ceratonia siliqua). It is also known as carob gum.
- Where it is used
- Used as a thickener and stabiliser in ice cream, cream cheese, sauces, soups and baked goods; it strengthens gel structure when combined with carrageenan and xanthan gum.
- Health note
- Evaluations concluded that a numerical acceptable daily intake was not required. As an indigestible fibre, digestive complaints may be reported at high intakes.
- Halal assessment
- The source is entirely plant based (carob seed) and no animal input is used in its production. Consult the manufacturer's halal certificate for a definitive answer.
