- What it is & how it is made
- A natural plant gum collected as a dried exudate from the stems and branches of shrubs of the genus Astragalus. The main producing regions are Middle Eastern countries such as Iran and Türkiye.
- Where it is used
- Used as a thickener, emulsifier and stabiliser in sauces, salad dressings, confectionery coatings and bakery decorations.
- Health note
- Evaluations concluded that a numerical acceptable daily intake was not required. As with other plant gums, allergic reactions have been reported in sensitive individuals.
- Halal assessment
- The source is entirely plant based (a plant exudate) and no animal input is used in its production. Consult the manufacturer's halal certificate for a definitive answer.
