What it is & how it is made
A natural plant gum collected as a dried exudate from the trunks of acacia trees (Acacia senegal and Acacia seyal). It is mainly sourced from countries of the Sahel belt.
Where it is used
Used to emulsify flavour oils in carbonated drinks, to glaze confectionery surfaces, to encapsulate powdered flavours and as a stabiliser in bakery products.
Health note
Evaluations concluded that a numerical acceptable daily intake was not required; it is classified as a soluble fibre.
