What it is & how it is made: A natural plant gum collected as a dried exudate from the trunks of acacia trees (Acacia senegal and Acacia seyal). It is mainly sourced from countries of the Sahel belt.
Where it is used: Used to emulsify flavour oils in carbonated drinks, to glaze confectionery surfaces, to encapsulate powdered flavours and as a stabiliser in bakery products.
Health note: Evaluations concluded that a numerical acceptable daily intake was not required; it is classified as a soluble fibre.
