- What it is & how it is made
- A thickener produced by the bacterium Xanthomonas campestris through sugar fermentation. Its source is microbial or plant-based.
- Where it is used
- Used to provide body and stability in sauces, salad dressings, gluten-free baked goods, ice cream and beverages.
- Health note
- It is considered safe at food levels; it is an indigestible fibre. At very high doses it can cause mild bloating.
- Halal assessment
- Because the fermentation medium is usually plant-based (maize, soy, wheat sugar), it is widely accepted as halal or plant-derived. Since a milk-derived component may rarely be used in the medium, the manufacturer can be consulted in very sensitive cases.
