- What it is & how it is made
- A plant galactomannan gum obtained by milling the seed endosperm of the tara tree (Caesalpinia spinosa). Peru is the main producing country.
- Where it is used
- Used as a thickener and stabiliser in dairy products, ice cream, sauces and prepared desserts; it functions similarly to locust bean and guar gum.

- Evaluations concluded that a numerical acceptable daily intake was not required.
