What it is & how it is made
A microbial polysaccharide produced by fermentation of the bacterium Sphingomonas elodea (formerly Pseudomonas elodea) on a carbohydrate containing medium. After fermentation it is precipitated and dried.
Where it is used
Used to keep particles suspended in plant based drinks, to form gels in jellies and desserts, and as a stabiliser in dairy products and glazing gels; it is effective at very low levels.
Health note
Evaluations concluded that a numerical acceptable daily intake was not required.
Halal assessment
Its production relies on microbial fermentation and the medium is usually based on a plant carbohydrate. Since the nitrogen source in the fermentation medium can vary by producer, consult the manufacturer's halal certificate for a definitive answer.
