What it is & how it is made: A gelling agent found naturally in fruits such as apples and citrus peel. Its source is entirely plant-based.
Where it is used: Used for body and gel structure in jam, marmalade, jelly, fruit desserts and milk desserts.
Health note: It is a safe, natural soluble fibre and is regarded positively on health grounds.
