- What it is & how it is made
- A modified cellulose derivative obtained by treating plant cellulose with sodium hydroxide and monochloroacetic acid. It is also known as sodium carboxymethyl cellulose or cellulose gum.
- Where it is used
- Used as a thickener, stabiliser and water binding agent in ice cream, dairy desserts, sauces, beverages, bakery products and gluten free doughs.
- Health note
- Evaluations concluded that a numerical acceptable daily intake was not required for the modified celluloses. It is an indigestible fibre.
- Halal assessment
- The source is plant cellulose and the chemicals used in production are of mineral or synthetic origin; no animal input is expected. Consult the manufacturer's halal certificate for a definitive answer.
