- What it is & how it is made
- A very widely used emulsifier produced from fatty acids. Its raw material may be either vegetable or animal fat; the source varies by product.
- Where it is used
- Used to stabilise the mixture in bread, margarine, ice cream, biscuits, chocolate and many processed foods.
- Health note
- It is considered safe at food-use levels.
- Halal assessment
- If it is produced from vegetable oil it is halal; if it is produced from animal fat, especially pork or an animal not slaughtered according to Islamic rules, it is problematic. Because the source is mostly not stated on the label, it has been left as doubtful. It can be accepted as halal in products that are halal-certified or labelled 'of plant origin'.
