What it is & how it is made
A product obtained from the reaction of sucrose with an edible fat or oil, consisting of a mixture of sucrose esters and mono- and diglycerides.
Where it is used
Used as an emulsifier. Permitted under Annex II of EU Regulation 1333/2008 and under the Turkish Food Codex Food Additives Regulation.
Health note
A group acceptable daily intake (ADI) of 40 mg per kg body weight per day was established for E 473 and E 474 in 2004; this value is also cited as the group ADI in EFSA's 2023 opinion.
Halal assessment
Sucrose is of plant origin, but because an edible fat or oil is used directly in production the decisive point is the origin of that fat. As fats may be either vegetable or animal, unless the source is documented it should be treated as source dependent; consult the manufacturer's halal certificate for a definitive answer.
